To Pickle Beet-hoot

Ingredients

Directions

  1. Boil the beet-root until tender, then let it cool completely.

  2. Peel and slice the beet-root, and place it in a jar.

  3. Cover the beet-root with boiled vinegar that has cooled down.

  4. For added flavor, you can include boiled shallots in the pickle.

  5. Carrots can be prepared similarly, with or without shallots, or with small silver onions boiled briefly in the pickle.
