Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the dough

  1. Preheat the oven to 350°F (175°C).

  2. Work the butter into the flour until well combined.

  3. Add the salt and mix in the egg yolks and cream (or water) to form a paste.

Shape and bake

  1. Roll the dough into a round shape, about ¾ inch thick.

  2. Score the top in small diamond shapes and brush with egg yolk.

  3. Bake for about 30 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Coats the flour and adds richness and tenderness to the dough.
Flour
Forms the structure of the dough once mixed with liquid and fat.
Egg yolks
Bind the dough and add richness, and brushed on top they help the surface brown.
Cream
Adds moisture and fat so the dough comes together into a paste.

The step that matters

Working the butter into the flour. The butter should be fully blended into the flour so it coats the flour particles. This limits gluten development and keeps the dough tender rather than tough.
