What each ingredient does

Lean beef
Provides the main body and meaty flavour of the gravy as it simmers.
Arrowroot
Thickens the liquid into a glossy gravy when stirred in and brought to a boil.
Mushroom ketchup or harvey's sauce
Adds savoury depth and a salty, umami flavour to the gravy.

The step that matters

Stirring the arrowroot into the gravy. Arrowroot must be mixed smoothly with cold water first, otherwise it clumps. It thickens only once the liquid is hot and brought to a boil, so the gravy needs to come up to a boil after it is added.

Swap the arrowroot
