Brown Onion Sauce

Ingredients

Directions

Make the onions

  1. In a frying pan, melt 2 tablespoons of butter over low heat.

  2. Add a few slices of onions at a time, browning them slowly. As they shrink and brown, add more slices until all are in the pan.

  3. Season with salt, pepper, and cayenne.

Finish the sauce

  1. Stir in ½ cup of brown gravy and 1 tablespoon of butter rolled in flour.

  2. Let simmer until onions are tender and the sauce is smooth. Skim off any excess fat if necessary.

  3. Finally, add ⅓ cup of port wine and ⅓ cup of mushroom ketchup.

What each ingredient does

Spanish onions
Slow browning builds sweetness and deep colour, forming the sauce's main flavour and body.
Butter
Fat that carries the onion browning and enriches the sauce's flavour and mouthfeel.
Brown gravy
Adds savoury liquid and body, helping the sauce become smooth and pourable.
Flour
Thickens the sauce when rolled into butter and stirred in, giving it body.
Port wine
Adds sweetness and depth of flavour as it reduces into the sauce.
Mushroom ketchup
Adds concentrated savoury, umami flavour that deepens the sauce.

The step that matters

Browning the onions slowly over low heat. Onions brown through gradual caramelisation of their natural sugars. Rushing with high heat can scorch them before they turn sweet and deeply coloured, leaving a bitter taste.
