What each ingredient does

Anchovies
Provide the salty, savoury flavour that defines the sauce.
Thick melted butter
Forms the rich, smooth base that carries the anchovy flavour.

The step that matters

Rubbing the anchovy mixture through a fine sieve. Pressing the paste through a fine sieve breaks down fibres and removes lumps, giving the sauce a smooth texture rather than a gritty one.

“What each ingredient does” and “The step that matters” were written by Claude from this recipe’s own method and reviewed in samples by CompKitchen.
