Boiled Veal

Ingredients

Directions

Prepare the meats

  1. Boil the knuckle of veal in plenty of water for 2 hours.

  2. Have the calf's head cut in half by the butcher. Remove all inside bones from the calf's head.

  3. Wash the head well in several waters with a little salt to draw out the blood.

  4. Boil the head in plenty of water for 2 to 2.25 hours.

Make the brains and serve

  1. Clean the brains.

  2. Boil the brains in a cloth with sage leaves for 20-30 minutes.

  3. In a small saucepan, beat the brains with salt, pepper, butter, and lemon juice until hot.

  4. Serve the brains around the skinned tongue, garnished with sliced lemon.

What each ingredient does

Veal knuckle
Long simmering breaks down connective tissue, giving the meat tenderness and a rich broth.
Calf's head
Provides the main body of the dish, with its gelatinous connective tissue turning tender during boiling.
Brains (in the method)
Become soft and creamy when boiled, then beaten with butter for a smooth, rich texture.
Butter
Adds fat and richness, emulsifying with the brains into a smooth, silky mixture.
Lemon juice
Adds acidity that brightens the rich brains and balances the fat.

The step that matters

Washing the calf's head in several waters with salt. Soaking and rinsing draws out blood before boiling. Leftover blood can cloud the broth and leave a dark, off-flavoured taste in the meat.

Swap the thyme

How well each one fits the dish's main ingredients (veal, sage, butter, lemon, pepper, bread, egg):

  1. Parsleyfits about as well
  2. Marjoramfits about as well
  3. Thymethe original
  4. Tarragonfits about as well

Fit is the average pairing score against veal, sage, butter, lemon, pepper, bread, egg. Candidates are from the same food group and used in at least 100 recipes.
