What each ingredient does

Eggs
Whites set around the yolk while the yolk stays soft, forming the dish's main texture.
Water
Heats the eggs gently and evenly, cooking them without direct contact with a hot pan.

The step that matters

Slipping the eggs into the water. Eggs dropped into boiling water spread and cook unevenly if not added gently. Cracking each egg into its own cup first lets it slide in carefully, keeping the white close to the yolk so the poached egg holds a neat shape.

Swap the spinach

The recipe marks spinach as optional. How well each one fits the dish's main ingredients (egg, ham):

  1. Asparagusfits better
  2. Mustardfits better
  3. Leekfits about as well
  4. Spinachthe original

Fit is the average pairing score against egg, ham. Candidates are from the same food group and used in at least 100 recipes.
