What each ingredient does

Scotch barley
Thickens the broth and adds chewy texture as it softens during simmering.
Flour
Thickens the strained broth into a smooth, lightly bodied sauce.
Egg yolks
Enrich and thicken the soup slightly when stirred in with cream.
Cream
Adds richness and a silky, mellow body to the finished soup.
Port wine
Adds depth, sweetness and color to the sauce.

The step that matters

Stir in beaten egg yolks and cream before serving. Egg yolks can curdle or scramble if they overheat. Adding them off the heat, with some hot broth first, keeps the soup smooth and thick.

Swap the onion

The recipe marks onion as optional. How well each one fits the dish's main ingredients (meat, barley, celery, turnip, carrot, flour, butter):

  1. Leekfits better
  2. Parsnipfits better
  3. Beetrootfits better
