Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Pork head
- Forms the main body of the dish, with its skin, ears and tongue giving the collared meat its structure.
- Coarse sea salt
- Draws moisture out of the meat and seasons it during the curing rub.
- Saltpetre
- Helps cured meat keep a stable pink colour and resists spoilage bacteria.
- Coarse sugar
- Balances the sharpness of the salt and adds mild sweetness to the cure.
The step that matters
Rubbing in the cure and letting it sit a week. Salt and curing salts must penetrate deep into the meat to preserve it and set its colour. Rubbing thoroughly and allowing the full week gives the cure time to work evenly; shallow or brief curing can leave uneven colour and poor keeping.
