Ground Rice Pudding

Ingredients

Directions

The book gives no oven temperature. The 350°F in the steps was added when the recipe was transcribed, as a starting point.

Make the base

  1. In a saucepan, heat 1 quart of new milk with your choice of flavoring until it boils.

  2. Stir in ¼ pound of ground rice that has been wetted with a little cold milk. Continue stirring until the mixture boils and thickens.

  3. Remove the flavorings and let the mixture cool.

Finish and bake

  1. Once cool, add 6 beaten eggs, 6 ounces of sugar, and a pinch of nutmeg.

  2. For a richer pudding, mix in 2 additional eggs, ¼ pound of butter, and ½ glass of brandy, along with a few bitter almonds or ratafia.

  3. Bake in a moderate oven (350°F / 175°C) for 45 minutes to 1 hour.

What each ingredient does

Ground rice
Its starch swells and thickens the milk as it boils, giving the pudding body.
Eggs
Set when baked, adding structure and a custard-like texture to the pudding.
Milk
Forms the liquid base that the rice thickens and the eggs set into a custard.
Sugar
Sweetens the pudding and adds to its soft, tender texture.
Butter
Adds fat for richness and a smoother, more tender crumb in the optional richer version.

The step that matters

Thickening the ground rice in the milk. Ground rice must be stirred continuously while the mixture boils so its starch swells evenly and does not scorch or form lumps. Wetting it with cold milk first helps it disperse smoothly.
