Why it works: Onion and mustard match in chemistry and in kitchens. They rank in the top 6% of all ingredient pairs, and cooks put them together in 9,259 recipes. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓

Duck Pie

Ingredients

Directions

  1. Prepare a pie using brown gravy, sage, onion, and bread crumbs instead of forcemeat.

  2. Add port wine, catsup, curry or cayenne, and made mustard.

  3. Thicken the mixture with butter rolled in flour.

  4. If using cold poultry or game, ensure they are already cooked.

  5. Form the mixture into a pie with minimal baking.

  6. If using puff pastry, roll it thin and inform the baker to remove it from the oven as soon as the crust is done.
