Once cold, beat in the egg yolks.
In a saucepan, heat the cream until it boils.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Egg yolks
- Thicken the cream as they set gently with heat, giving it a smooth, rich body.
- Cream
- Provides fat and richness, giving the custard a smooth, velvety texture.
- Green tea
- Supplies the tea flavour and aroma that define the cream.
- Loaf sugar
- Sweetens the cream and balances the bitterness of the tea.
The step that matters
Return to the heat and stir until it thickens, but do not let it boil.. Egg yolks thicken at gentle heat but scramble and curdle if they get too hot. Stirring constantly and stopping before boiling keeps the custard smooth.
