Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Yeast
Ferments the sugar, producing carbon dioxide for fizz and alcohol.
Loaf sugar
Provides the sugar that yeast feeds on, and sweetness in the finished beer.
Ginger
Adds its sharp, spicy aroma and flavour to the beer.
Egg white
Binds impurities as it cooks, so skimming clears the liquid.

The step that matters

Skim the egg white foam carefully. The cooked egg white collects impurities and sediment as it rises. Removing it cleanly keeps the liquid clear and stops off flavours forming during fermentation.

Swap the lemon

How well each one fits the dish's main ingredients (sugar, ginger, cream, egg, brandy, hops):

  1. Vanillafits better
  2. Peachfits about as well
  3. Applefits about as well
  4. Lemonthe original

Fit is the average pairing score against sugar, ginger, cream, egg, brandy, hops. Candidates are from the same food group and used in at least 100 recipes.
