Cream Cheese

Ingredients

Directions

Make the curd

  1. Combine the last quart of milk with the cream in its native warmth.

  2. Stir in 2 tablespoons of rennet.

  3. When the curd forms, break it gently with a skimming dish.

  4. After 2 hours, place cheese-cloth on a sieve and lay the curd on it, breaking it slightly with your hand.

Press and dry

  1. Transfer the curd to a vat and place a 2-pound weight on top.

  2. After 12 hours, remove the curd and bind it with a fillet.

  3. Turn the cheese daily on a clean board using fresh dock leaves or nettles until completely dry.

Ripen

  1. If the weather is warm, the cheese will be ready in 3 weeks.

  2. To hasten maturity, place it between two pewter plates.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Milk
Forms the body of the cheese once rennet sets it into curd.
Cream
Adds richness and fat, giving the cheese a softer, creamier texture.
Rennet
Enzyme that coagulates the milk proteins, turning the liquid into curd.

The step that matters

Breaking the curd. Cutting or breaking the curd gently controls how much moisture is released. Breaking it too roughly or too early can cause fine particles and loss of yield, while leaving it too whole retains excess whey and makes the cheese wetter.

Swap the dock

How well each one fits the dish's main ingredients (milk, cream, cheese):

  1. Nutmegfits better
  2. Peppermintfits better
  3. Celeryfits better
  4. Dockthe original
