Ingredients

Directions

Prepare

  1. In a large thick stewpan or saucepan, lay the sliced ham.

  2. Place the veal on top of the ham.

  3. Pour in the broth and heat over a brisk fire until well reduced.

Make the glaze

  1. Insert a knife into the meat and continue stewing gently until a glaze forms.

  2. Shake the stewpan frequently and watch the gravy closely to prevent burning.

  3. When the gravy is a fine deep amber color, add enough boiling broth to cover the meat.

Finish the gravy

  1. Add the parsley, mushrooms, and green onions.

  2. Optionally, add mace, white peppercorns, and celery for extra flavor.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Veal
Provides the meat and gelatin that give the gravy body and richness.
Ham
Lines the pan and releases savory fat and flavor as it cooks.
Broth
Forms the liquid base that reduces into a concentrated, flavorful gravy.
Mushrooms
Add earthy savory depth to the gravy.

The step that matters

Watching the glaze and gravy color. Once the meat sticks and browns, the gravy can scorch quickly; frequent shaking and close watching prevent burning while the amber glaze develops, which gives color and flavor.

Swap the mace

The recipe marks mace as optional. How well each one fits the dish's main ingredients (ham, veal, parsley, mushroom, onion, celery):

  1. Thymefits better
  2. Marjoramfits better
  3. Garlicfits better
  4. Macethe original

Fit is the average pairing score against ham, veal, parsley, mushroom, onion, celery. Candidates are from the same food group and used in at least 100 recipes.
