What each ingredient does

Mutton kidneys
Provide the main meaty body of the gravy as they cook down and break into it.
Butter
Carries flavour and adds richness while the kidneys and onion cook.
Onion
Adds savoury sweetness and aroma as it softens in the fat.
Flour (in the method)
Coats the kidney slices so the liquid thickens into a smooth gravy.

The step that matters

Cooking off the moisture before adding water. Cooking the kidneys over medium heat, shaking well, until most moisture evaporates lets them brown slightly rather than steam. Browning builds deeper flavour, and a dry start keeps the later boiling water from diluting the gravy.

Swap the onion
