What each ingredient does

Heavy cream
Adds fat and body, giving the sauce a smooth, mellow texture.
Vinegar
Adds acidity that sharpens the horseradish heat and balances the cream.
Grated horseradish
Provides the pungent flavour and heat that defines the sauce.

The step that matters

Heating without boiling. Heating the cream-based sauce gently and stopping before a simmer keeps the dairy smooth. Boiling can cause the cream to curdle and separate, spoiling the texture.

Swap the horseradish

How well each one fits the dish's main ingredients (cream, vinegar):

  2. Horseradishthe original
