To Roast Sirloin, or Ribs of Beef

Ingredients

Directions

Prepare the beef

  1. Let the joint hang until perfectly sweet.

  2. Remove the marrow from the backbone and cut out the fat kernels.

  3. In warm weather, guard the meat from flies and wipe off any moisture.

  4. Dust the surface with powdered ginger or pepper.

  5. If the joint is not large, trim the ends of the bones and salt them for a few days.

Roast

  1. Spit the beef firmly and place it near the fire to firm the surface.

  2. Move it away from the fire to allow heat to penetrate the interior.

  3. Baste constantly and move it closer to the fire for the last 30 minutes to brown.

  4. If desired, dredge with flour at the start and sprinkle with fine salt near the end.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Beef
Forms the main body of the dish; its interior cooks gently while the surface browns.
Fat kernels (in the method)
Richly flavoured fat that carries flavour and moisture through the joint as it cooks.
Flour
Dredging forms a crust on the surface that helps it brown and hold juices.

The step that matters

Moving the beef away from the fire. Searing firms the surface first, then moving the joint away lets heat reach the centre slowly. Staying too close would scorch the outside before the interior is cooked.

Swap the ginger

How well each one fits the dish's main ingredients (beef, flour):

  1. Jalapenofits better
  2. Turmericfits better
  3. Nutmegfits better
  4. Gingerthe original
