To Roast Calf's Liver

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat your oven to 350°F (175°C).

  2. If desired, lard the liver with bacon or wrap it in well-buttered paper.

Roast and make the gravy

  1. Roast the liver for 1 to 1¼ hours, basting constantly.

  2. Remove the paper and froth the liver for 10 to 15 minutes before it's done.

  3. For gravy, trim small bits of liver, flour them, and fry with sliced onion.

  4. Add ¾ pint of water, peppercorns, herbs, and season with salt and lemon juice.

Serve

  1. Serve with a piquant sauce, such as poivrade or brown eschalot, and good gravy.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Calf's liver
Forms the main body of the dish, cooked through to a tender, soft texture.
Butter
Adds richness and moisture, and helps the liver brown and stay soft while roasting.
Bacon
Lards the liver, adding fat and savoury flavour that keeps the meat moist as it roasts.
Onion
Fried in the gravy, it becomes sweet and savoury, flavouring the sauce.

The step that matters

Basting constantly while roasting. Liver is lean and dries out quickly in heat. Regular basting with melted fat keeps the surface moist and the interior tender.

Swap the lemon

The recipe marks lemon as optional. How well each one fits the dish's main ingredients (liver, pepper, butter, vinegar, onion):

  1. Lemonthe original
  2. Limefits about as well
  3. Plumfits about as well

Fit is the average pairing score against liver, pepper, butter, vinegar, onion. Candidates are from the same food group and used in at least 100 recipes.
