Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg yolks
Thicken the sauce and enrich it as they gently set over low heat.
Butter
Carries the flavour of the mushrooms and adds richness while they cook gently.
Mushroom buttons
Add earthy flavour and a tender texture to the finished dish.
Sauce tournee
Forms the thickened base that coats the veal and mushrooms.
Lemon juice
Adds acidity that brightens the rich, creamy sauce.

The step that matters

Shake the saucepan over low heat until the sauce is just set. Egg yolks thicken through gentle heat but scramble if the sauce gets too hot or is overheated. Keeping the heat low and stopping once it just thickens keeps the sauce smooth.

Swap the mace

How well each one fits the dish's main ingredients (veal, mushroom, butter, sauce, egg, lemon):

  1. Parsleyfits better
  2. Tarragonfits better
  3. Capersfits better
  4. Macethe original

Fit is the average pairing score against veal, mushroom, butter, sauce, egg, lemon. Candidates are from the same food group and used in at least 100 recipes.
