What each ingredient does

Mutton cutlets
Provide the meat, which becomes tender and flavourful as it simmers slowly in the liquid.
Potatoes
Form the layers that soften as they cook, thickening the stew and adding body.

The step that matters

Add the salt when the stew begins to boil. Adding salt once the water is already hot and simmering lets it season the liquid evenly, rather than sitting unevenly on the cold surface or sinking in unmixed.

Swap the onion

The recipe marks onion as optional. How well each one fits the dish's main ingredients (mutton, potato, pepper):

  1. Carrotfits better
  2. Capsicumfits better
  3. Tomatofits about as well
  4. Onionthe original

Fit is the average pairing score against mutton, potato, pepper. Candidates are from the same food group and used in at least 100 recipes.
