Curried Saveetbreads

Ingredients

Directions

Prepare the sweetbreads

  1. Wash and soak the sweetbreads as usual.

  2. Boil water with a little coarse sea salt and a whole onion.

  3. Add the sweetbreads and simmer for 10 minutes.

  4. If available, substitute weak veal broth for the water.

  5. Remove the sweetbreads and let them cool completely on a drainer.

  6. Cut the cooled sweetbreads into half-inch slices.

Cook and serve

  1. Optionally, flour and fry the slices lightly in butter.

  2. Alternatively, place the slices in enough curried gravy to cover them.

  3. Stew the sweetbreads gently in the gravy for 20 to 30 minutes.

  4. Add lemon juice or chili vinegar to taste.

  5. Serve the curry very hot.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sweetbreads (in the method)
Provide the tender, mild meat that forms the body of the curry.
Butter
Adds richness and browning when the slices are fried lightly in it.
Curried gravy
Carries the spice and moisture, and softens the sweetbreads as they stew.
Lemon juice or chili vinegar
Adds acidity that brightens the rich gravy and balances the spice.

The step that matters

Stewing the sweetbreads gently in the gravy. Sweetbreads are delicate; a hard boil toughens their proteins and makes them rubbery. Keeping the gravy at a gentle simmer lets them stay tender while absorbing the curry flavour.

Swap the mango

The recipe marks mango as optional. How well each one fits the dish's main ingredients (onion, veal, butter, lemon):

  1. Limefits about as well
  2. Avocadofits about as well
  3. Coconutfits about as well
  4. Mangothe original

Fit is the average pairing score against onion, veal, butter, lemon. Candidates are from the same food group and used in at least 100 recipes.
