Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Mushrooms
Provide the main body and earthy flavour of the topping as they soften and release moisture.
Butter
Carries the mushrooms and adds richness, and browns the bread when fried.
Flour
Thickens the cooking juices into a smooth sauce once lightly browned and mixed with the liquid.
Gravy or beef broth
Supplies the liquid that turns the mushrooms and flour into a savoury sauce.
Bread
Forms the crisp, absorbent base that holds the mushroom topping.

The step that matters

Sprinkle in the flour and stir until lightly browned. Flour must be cooked in the fat until lightly browned so it loses its raw taste and thickens smoothly when the liquid is added. Adding liquid too early can leave lumps.

Swap the mace

How well each one fits the dish's main ingredients (mushroom, butter, pepper, flour, beef, lemon, bread):

  1. Thymefits better
  2. Parsleyfits better
  3. Marjoramfits better
  4. Macethe original

Fit is the average pairing score against mushroom, butter, pepper, flour, beef, lemon, bread. Candidates are from the same food group and used in at least 100 recipes.
