Rice a LA Vathek, or Rice Pudding a LA Yathek

Ingredients

Directions

Prepare the almond milk

  1. Blanch and pound the fine and bitter almonds into a smooth paste, adding a few drops of water to prevent oiling.

  2. Stir in the boiling milk gradually, then strain through a thin cloth and set aside to cool.

  3. Wash and soak the rice for 10 minutes, then drain.

Cook the rice

  1. Pour the almond milk over the rice, bring to a slow boil, and simmer until tender, stirring often to prevent lumps.

  2. Add the butter and sugar, and mix until fully incorporated.

Mold and serve

  1. Mold the rice mixture, pressing it evenly and leaving a hollow center with an inch-thick edge.

  2. Brush the top with butter before baking to prevent dryness.

  3. Serve with a large jarful of apricot jam poured into the center.

What each ingredient does

Fine jordan almonds
Provide the main almond paste that flavors and thickens the milk.
Carolina rice
Forms the body of the pudding as its starch softens and thickens in the milk.
Boiling milk
Liquid that extracts almond flavor and cooks the rice to a creamy texture.
Fresh butter
Adds richness and moisture, and helps keep the pudding from drying out.
Pounded sugar
Sweetens the pudding and contributes to a soft, tender texture.

The step that matters

Simmering the rice in almond milk. Rice must simmer slowly and be stirred often; if heat is too high or stirring stops, the starch can scorch on the bottom or form lumps before the grains soften evenly.

Swap the apricot

How well each one fits the dish's main ingredients (almond, milk, rice, butter, sugar):

  1. Vanillafits better
  2. Coconutfits better
  3. Figfits better
  4. Apricotthe original

Fit is the average pairing score against almond, milk, rice, butter, sugar. Candidates are from the same food group and used in at least 100 recipes.
