To Dry Green Gooseberries

Ingredients

Directions

Prepare

  1. Cut off the buds from the green gooseberries and split them halfway down the tops. Scoop out the seeds using the small end of a tea or egg spoon.

Make the syrup and simmer

  1. In a pot, boil the sugar and water together for 15 minutes, skimming the syrup thoroughly.

  2. Add the seeded gooseberries to the syrup and simmer for 5 to 7 minutes until clear and tender.

  3. Remove the gooseberries from the syrup and add more gooseberries to the syrup, draining them slightly when done.

Dry

  1. Spread the gooseberries singly on dishes.

  2. Dry them gradually in a cool oven or sunny window.

What each ingredient does

Green gooseberries
Fruit that softens in the syrup and dries into a chewy, tart-sweet piece.
Sugar
Sweetens the fruit and draws moisture out of it, helping it keep as it dries.

The step that matters

Simmer until clear and tender. Gentle simmering lets syrup slowly penetrate the fruit. Overcooking can break the skins and make the gooseberries mushy, which hurts texture during drying.
