Ingredients

Directions

  1. Remove the gristles and long bones from the breast of veal.

  2. Pound the veal with a cleaver until even, then cut it into a square shape.

  3. Sprinkle the veal with fine salt, cayenne, and mace.

  4. Prepare forcemeat according to the recipe from Chapter VIII, increasing the ingredients as needed.

  5. Lay thin slices of bacon or ham over the veal, then place the forcemeat in the center.

  6. Roll the veal up tightly and skewer the ends with small skewers, binding it with twine or tape.

  7. Slowly stew the rolled veal in hot veal stock until tender throughout.
