Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eels
Provide the main body of flesh that breaks down to flavour the broth.
Bread crust
Adds body and helps lightly thicken the broth as it simmers.
Flour
Thickens the boiling cream, giving it body and a smoother, richer mouthfeel.
Cream
Adds richness and fat, softening the flavour and texture of the soup.

The step that matters

Simmer until the fish separates. Cooking the eels gently with the lid on lets collagen and flesh release slowly into the water. Boiling hard can make the broth cloudy and tough.

Swap the mace

How well each one fits the dish's main ingredients (onion, pepper, bread, carrot, cream, flour):

  1. Celeryfits better
  2. Parsleyfits better
  3. Marjoramfits better
  4. Macethe original

Fit is the average pairing score against onion, pepper, bread, carrot, cream, flour. Candidates are from the same food group and used in at least 100 recipes.
