Carrot Soup

Why it works: Carrot and pepper match in chemistry and in kitchens. They rank in the top 6% of all ingredient pairs, and cooks put them together in 14,555 recipes. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓

Ingredients

Directions

Make the soup

  1. In a pot, stew the sliced carrots in the rich stock until tender.

  2. Force the cooked carrots through a sieve or tammy using a wooden spoon to create a smooth pulp.

Season and serve

  1. Season with grated white sugar, cayenne pepper, and coarse sea salt to taste.

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Sugar and pepper barely smell alike, yet cooks put them together in 19,401 recipes: they work on texture and structure more than aroma.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Carrots
Provide the main body, sweetness and smooth thickened texture once pureed.
Rich stock
Cooks the carrots and supplies the liquid and savoury depth of the soup.
White sugar
Adds a touch of sweetness to balance the savoury stock and carrot flavour.

The step that matters

Reboil the carrot pulp until thick. Reboiling lets excess water evaporate and concentrates the flavour, so the soup thickens to the intended rich consistency rather than staying thin and watery.

Swap the carrot

How well each one fits the dish's main ingredients (sugar, pepper):

  1. Capsicumfits better
  2. Mustardfits about as well
  3. Carrotthe original
  4. Sweet potatofits about as well

Fit is the average pairing score against sugar, pepper. Candidates are from the same food group and used in at least 100 recipes.
