Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Truffles
Provide the main aroma and earthy flavour that defines the sauce.
Butter
Gently cooks the truffles and carries their aroma into the sauce as fat.
Consommé
Adds savoury liquid that softens the truffles and moistens the sauce.
Béchamel sauce
Forms the creamy base that gives the sauce body and a smooth texture.
Lemon juice
Adds a small amount of acidity that brightens the rich flavours.

The step that matters

Stewing the truffles gently with butter. High heat can scorch the butter and toughen or darken the truffles, dulling their aroma. Slow, gentle stewing lets the fat draw out the aromatic compounds while keeping the slices tender.
