Dressed Crab

Ingredients

Directions

Prepare the crab

  1. Remove the claws and pull the body from the shell.

  2. Keep the white meat and soft yellow meat separate.

  3. Wash and trim the large back shell.

  4. Place all the white meat on one side and the soft meat on the other, dividing them with cucumber or radish slices.

  5. Crack the claws and lay them underneath the crab for support.

Dress and serve

  1. To dress the crab, scoop the meat into a bowl and mix with a little vinegar, bread crumbs, grated nutmeg, and butter or sweet oil.

  2. Return the mixture to the shell and heat it before serving.

  3. Serve hot with dry toast cut into large squares or dice.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Crab meat
Forms the main body of the dish, giving it its flavour and texture.
Bread crumbs
Absorb moisture and bind the mixture so it holds together in the shell.
Butter or sweet oil
Adds fat, which carries flavour and keeps the mixture moist and rich.
Vinegar
Adds acidity that brightens the flavour of the rich crab meat.

The step that matters

Heat the dressed crab in the shell. The mixture is already cooked, so heating it only needs to warm it through. Overheating can toughen the delicate crab meat and dry out the bread crumbs.

Swap the nutmeg

How well each one fits the dish's main ingredients (crab, cucumber, vinegar, bread, butter):

  1. Tarragonfits better
  2. Garlicfits better
  3. Capersfits better
  4. Nutmegthe original

Fit is the average pairing score against crab, cucumber, vinegar, bread, butter. Candidates are from the same food group and used in at least 100 recipes.
