Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Trout (in the method)
Is the main protein; it browns lightly and becomes tender as it stews.
Butter
Carries the spices and gives the fish a rich, browned flavour.
Veal gravy
Provides the liquid that stews the fish and forms the sauce that moistens it.

The step that matters

Stew slowly for 40 minutes. Low, gentle heat keeps the fish tender and moist; boiling hard would toughen the flesh and break it apart.

Swap the mace

How well each one fits the dish's main ingredients (butter, nutmeg, veal, parsley, lemon, wine):

  1. Thymefits better
  2. Marjoramfits better
  3. Tarragonfits better
  4. Macethe original

Fit is the average pairing score against butter, nutmeg, veal, parsley, lemon, wine. Candidates are from the same food group and used in at least 100 recipes.
