Italian Salad

Ingredients

Directions

  1. Prepare all ingredients: filleted soles, quenelles, cooked chicken, lobster, filleted anchovies, pared olives, hard-boiled eggs, beetroot, cucumbers, lettuce, small salad greens, celery, and cresses.

  2. Chop the lettuce and celery, then mix with the cresses and small salad greens.

  3. Place the mixed salad in the center of a serving dish, shaping it into a point at the top.

  4. Arrange the other ingredients around the salad as desired, slicing them thinly.

  5. Make a salad or Dutch sauce and pour it over the salad.

  6. Add aspic jelly in different parts of the salad.
