Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Leg of beef
Provides the meat and bone that flavour the broth as they simmer.
Water
Extracts flavour and gelatin from the beef to form the broth.
Bread crust
Adds a subtle toasted aroma and body to the broth.
Bread
Soaks up broth in the tureen, giving the dish a soft, substantial texture.

The step that matters

Skim the water well. Skimming removes the foam of coagulated proteins and fat that rise early in simmering, keeping the broth clear and clean-tasting.

Swap the mace

How well each one fits the dish's main ingredients (beef, parsley, bread):

  1. Marjoramfits better
  2. Thymefits better
  3. Pepperfits better
  4. Macethe original
