Collops of Veal

Ingredients

Directions

  1. Cut the veal into thin pieces and beat them very thin.

  2. Sauté the pieces until cooked through.

  3. Trim the pieces to the size of a crown coin and season with salt and pepper.

  4. Place the collops in a stewpan with either cooley sauce or béchamel sauce.

  5. Add forcemeat balls, stewed mushrooms, and whole dressed truffles.

  6. Season with additional salt, pepper, sugar, and lemon.

  7. Arrange the collops like cutlets, placing the mushrooms, balls, and truffles in the center.
