Why it works: Capsicum and pepper match in chemistry and in kitchens. They rank in the top 2% of all ingredient pairs, and cooks put them together in 34,571 recipes. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓

Galantine Veal

Ingredients

Directions

Prepare the veal

  1. Remove the chine bone, tendons, and rib bones from the veal breast.

  2. Flatten the veal and spread it with forcemeat or sausage meat.

  3. Arrange lines of gherkins, capsicums, ham or bacon, hard-boiled yolks, and truffles on top.

  4. If available, add boiled calves’ feet and pieces of fowl.

  5. Sprinkle with pepper and coarse sea salt.

Roll and stew

  1. Roll the veal tightly and wrap it in a cloth, tying it securely.

  2. Stew the wrapped veal for at least 2 hours.

Press and serve

  1. Remove from the pot, press it flat, and let it cool completely.

  2. Once cool, remove the cloth. Serve as a cold dish.

What each ingredient does

Veal breast
Forms the main body of the galantine, and its connective tissue turns tender and gelatinous during long stewing.
Forcemeat or sausage meat
Adds a moist, seasoned layer that keeps the filling juicy and binds the roll together.
Hard-boiled egg yolks
Add richness and a creamy texture to the sliced filling.
Fat ham or bacon
Contributes fat and savoury flavour that moistens the lean veal as it cooks.
Green gherkins
Provide acidity and a sharp contrast to the rich meat and fat.
Truffles
Add a strong earthy aroma that stands out in the filling.

The step that matters

Rolling and tying the veal tightly. A loose roll can open or leave gaps during stewing and pressing, so the slices lose their neat spiral pattern. Firm, even tension keeps the filling in place as the meat cooks and sets.

Swap the capsicum

How well each one fits the dish's main ingredients (veal, meat, ham, egg, truffle, pepper):

  1. Asparagusfits better
  2. Capsicumthe original
  3. Shallotfits about as well
  4. Leekfits about as well

Fit is the average pairing score against veal, meat, ham, egg, truffle, pepper. Candidates are from the same food group and used in at least 100 recipes.
