What each ingredient does

Mutton
Provides the main meat, which is tenderised and flavoured by the soak.
Vinegar
Acidity in the soaking liquid helps tenderise the meat and adds a sharp, tangy flavour.
Onions
Sliced onions in the soak add sweetness and aromatic flavour to the meat.
Gravy
Liquid for the stewpan method, adding moisture and savoury flavour during simmering.

The step that matters

Dry the mutton well before the final hanging. Surface moisture left after the long soak can dilute flavour and prevent good browning when roasting, so the meat must be thoroughly dried.
