Why it works: Lemon and pepper match in chemistry and in kitchens. They rank in the top 3% of all ingredient pairs, and cooks put them together in 27,047 recipes. Both carry trans-2-nonenal, which smells cardboard, fatty. The science ↓

Fobe-qtjabtek of Lamb

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Roast

  1. Preheat the oven to 400°F (200°C).

  2. Place the lamb in the oven, keeping it away from the direct heat at first.

  3. Baste the lamb well as it heats up.

  4. Cook for about two hours until done.

Season and serve

  1. Separate the shoulder from the ribs, but do not remove it completely.

  2. Under the shoulder, place a large lump of butter.

  3. Squeeze the lemon over the shoulder.

  4. Season the shoulder with pepper and coarse sea salt.

  5. Let it sit until the butter melts.

  6. Remove the shoulder and place it on another dish.
