Pork Cutlets

Ingredients

Directions

  1. Cut the best end from the neck or fore-loin of pork and trim it, leaving a little fat.

  2. Scrape the bone and mix sage and shallot with enough bread crumbs.

  3. Add black pepper and coarse sea salt to the crumbs and herbs.

  4. Dip each cutlet in clarified butter or melted lard, then press the crumb mixture onto the cutlets.

  5. Grease a sauté pan with lard and lay the cutlets in it.

  6. Fry the cutlets until they are a nice light brown.

  7. Remove the cutlets and dry them on paper.

  8. Serve with mashed potatoes and your choice of sauce.
