Turkey Roast

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the stuffing

  1. Stuff the turkey with sausage meat or veal stuffing mixed with bread crumbs and a beaten egg.

  2. If using truffles, peel, chop, and pound 1½ pounds, then mix with the same weight of fat bacon.

  3. Stuff the turkey with the truffle mixture two days before cooking to enhance flavor.

Roast and serve

  1. Place thin slices of fat bacon over the turkey breast and secure with a sheet of clean white paper.

  2. Roast the turkey in a 400°F (200°C) oven for two hours, basting well.

  3. Serve with gravy in the dish and bread sauce in a tureen.

What each ingredient does

Turkey
Forms the main body of the dish, carrying the stuffing and cooking as the central roast.
Bread crumbs
Absorb moisture and bind the stuffing so it holds together while cooking.
Beaten egg
Binds the stuffing mixture, helping it set into a cohesive texture as it cooks.
Fat bacon
Adds fat that bastes the turkey breast and keeps the lean meat moist during roasting.

The step that matters

Basting the turkey while it roasts. Lean breast meat dries out easily in dry oven heat. Regular basting spreads the fat and juices over the surface, keeping it moist and promoting even browning.

Swap the chestnut

The recipe marks chestnut as optional. How well each one fits the dish's main ingredients (turkey, meat, bread, egg, truffle, sauce):

  1. Chestnutthe original
  2. Peasfits about as well
  3. Beansfits less well
  4. Walnutfits less well

Fit is the average pairing score against turkey, meat, bread, egg, truffle, sauce. Candidates are from the same food group and used in at least 100 recipes.
