Roast Turkey

Ingredients

Directions

The book gives no oven temperature. The 300°F (150°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Stuff the turkey with veal stuffing, adding chopped and pounded truffles if desired.

  2. Keep large truffles whole for the body of the turkey.

  3. Let the stuffed turkey rest in the refrigerator for two days.

  4. Prepare chestnuts by peeling and pounding them.

  5. Roast the chestnuts at 300°F (150°C), covered with buttered paper.
