Lamb Pasty

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 400°F (200°C).

  2. In a pasty dish, lay the beef suet at the bottom.

  3. Season the suet with pepper, salt, thyme, nutmeg, cloves, and mace.

Assemble and bake

  1. Place the lamb pieces on top of the seasoned suet, forming a high border with the pastry.

  2. Cover with the sheet of pastry and seal the edges.

  3. Bake in the preheated oven until golden brown.

Finish and serve

  1. Once baked, remove from the oven and pour in the vinegar and beaten egg yolks.

  2. Add the good gravy and serve.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Lamb
Provides the main meat filling, which becomes tender during the long oven bake.
Beef suet
Adds fat and richness, keeping the meat moist as it cooks in the dish.
Pastry
Encloses the filling and forms a sealed crust that bakes to a golden brown.
Egg yolks
Add richness and colour to the finished pasty when brushed or poured in.
Vinegar
Adds a sharp acidity that brightens the rich filling and fat.

The step that matters

Sealing the pastry edges. A tight seal keeps juices and steam inside the pasty, so the filling cooks through in its own moisture rather than leaking out and drying the meat.

Swap the mace

How well each one fits the dish's main ingredients (lamb, beef, pepper, thyme, nutmeg, clove, vinegar):

  1. Allspicefits better
  2. Marjoramfits better
  3. Rosemaryfits better
  4. Macethe original

Fit is the average pairing score against lamb, beef, pepper, thyme, nutmeg, clove, vinegar. Candidates are from the same food group and used in at least 100 recipes.
