Ingredients

Directions

Make the vanilla milk

  1. Boil the vanilla stick in the milk with lump sugar for 1 hour.

  2. Remove the vanilla and let the milk cool.

Make the cream

  1. Prepare the isinglass and cream as you would for other creams.

  2. Whip the essence of vanilla into the mixture and sweeten with sifted sugar.

  3. Fill your mold with the mixture.

Unmold

  1. To unmold, run lukewarm water around the edges and dampen the top with a clean cloth before turning it out onto a dish.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Isinglass
Sets the cream so it holds its shape when unmolded.
Cream
Adds richness and a smooth, soft texture to the set cream.
Milk
Carries the vanilla flavour and forms the base of the mixture.
Sifted sugar
Sweetens the mixture.

The step that matters

Unmolding with lukewarm water. Lukewarm water loosens the edges of the set cream without melting it. Hot water would soften the surface and can make the cream lose its shape when turned out.

“What each ingredient does” and “The step that matters” were written by Claude from this recipe’s own method and reviewed in samples by CompKitchen.
