White Currant Jelly

Ingredients

Directions

Prepare

  1. Remove the seeds from the white currants.

Make the jelly

  1. Boil the sugar until it reaches a 'grande lisse' consistency.

  2. Remove the saucepan from the heat and stir the jelly lightly with a skimmer.

  3. Boil the jelly twice, then strain it through a sieve.

  4. Return the jelly to the heat, keeping the sides of the pan clean with a sponge.

Finish

  1. Skim off any foam and finish the jelly as you would with red jelly.

What each ingredient does

White currants
Provide the juice that sets into jelly, along with tartness and fruit flavour.
Clarified sugar
Sweetens the jelly and helps it set firm as the syrup thickens.

The step that matters

Boiling the sugar to grande lisse. The sugar must reach the grande lisse stage so the mixture sets properly as it cools. Sugar cooked too little stays runny, and cooked too far it becomes hard and grainy.
