What each ingredient does

Nectarines
Provide the fruit that is softened and preserved through repeated sugar soaking.
Clarified sugar
Draws water out of the fruit and preserves it through high sugar concentration.

The step that matters

Boil until they absorb the sugar. Boiling in sugar must be controlled so the fruit keeps its shape. Sugar slowly replaces water in the fruit, and overly vigorous boiling can break it down before the sugar has penetrated.
