Mushroom Ketchup

Ingredients

Directions

  1. Break up the mushrooms into small pieces and place them in an earthen pan.

  2. Sprinkle coarse sea salt over the mushrooms and let them sit for several days, mixing daily.

  3. After about a week, stop stirring when a thick scum rises to the top.

  4. Strain the liquid from the mushrooms and boil it with peppercorns, mace, ginger, cloves, and mustard seed in a muslin bag.

  5. Once cooled, bottle the liquid with the spices and seal tightly.

  6. After three months, boil the mixture again, cool it, and re-bottle it.

  7. This ketchup will keep for years.
