Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sugar
Provides sweetness and, when boiled, forms the body of the syrup.
Eggs
Beaten with shells, they bind impurities that rise during boiling so they can be skimmed off.
Orange flower water
Adds a floral aroma to the syrup.

The step that matters

Skim the mixture well. Boiling sugar syrup brings impurities to the surface as scum. Removing them thoroughly keeps the syrup clear and stops cloudiness or off flavours from developing during storage.

Swap the orange

How well each one fits the dish's main ingredients (sugar, egg):

  1. Vanillafits better
  2. Raisinfits better
  3. Lemonfits better
  4. Orangethe original

Fit is the average pairing score against sugar, egg. Candidates are from the same food group and used in at least 100 recipes.
