Raisin Wine

Ingredients

Directions

Prepare the wine

  1. Boil the hops in the water for 1 hour.

  2. Let the mixture cool, then pour it over the raisins.

  3. Allow it to steep for 3 weeks, stirring daily.

  4. Press the mixture and transfer it to a cask.

  5. Do not seal the cask until fermentation has ceased.

Age and finish

  1. After about 1 year, draw off the clear wine and return it to the barrel to settle.

  2. Strain any thick residue through a flannel bag.

  3. Before sealing the barrel, add 1 quart of brandy for every hogshead of wine.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Smyrna raisins
Provide the sugar and fruit flavour that the wine ferments into alcohol.
Hops
Add bitterness and aroma that balance the sweetness of the fruit.
Brandy
Raises the alcohol content and helps preserve the finished wine.

The step that matters

Do not seal the cask until fermentation has ceased. Sealing too early traps carbon dioxide produced by fermentation, which can build pressure and burst the cask. Waiting until bubbling stops keeps the vessel safe and lets the wine stabilise.

Swap the raisin

How well each one fits the dish's main ingredients (hops, brandy):

  1. Applefits better
  2. Grapefits better
  3. Peachfits better
  4. Raisinthe original

Fit is the average pairing score against hops, brandy. Candidates are from the same food group and used in at least 100 recipes.
