What each ingredient does

Pear barley
Releases starch and mild grain flavor into the water, giving the drink its body and character.
Lemon juice
Adds acidity that brightens the flavor and balances the mild, starchy base.
Gum-arabic
Adds body and a smoother mouthfeel to the liquid.

The step that matters

Boil until the liquid is reduced by half. Reducing concentrates the flavor and the starch released by the barley. Stopping too early leaves the drink thin and weak, while boiling too long makes it strong and overly thick.

Swap the lemon
