What each ingredient does

Oranges
Provide the main flavour and the juice that makes up the syrup's body.
Lemons
Add acidity that brightens the orange flavour.
Fine syrup
Provides sweetness and the liquid base of the final syrup.

The step that matters

Boil the quart of syrup until it reaches a caramel stage. Sugar syrup darkens and changes flavour quickly as it heats, so it can scorch or turn bitter if overcooked. Stopping at the right point gives the intended colour and taste before the cooler juice is added.

Swap the orange

How well each one fits the dish's main ingredients (lemon, syrup):

  1. Orangethe original
  2. Limefits about as well
  3. Raspberryfits less well
  4. Vanillafits less well

Fit is the average pairing score against lemon, syrup. Candidates are from the same food group and used in at least 100 recipes.
