Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Mutton
Provides the main meat, which becomes tender through long, gentle simmering.
Potatoes
Thicken the stew slightly as they cook and add starchy body to the broth.
Onions
Add sweetness and aroma as they soften and flavour the cooking liquid.

The step that matters

Skim and remove fat during the first simmer. Fat and foam rise to the surface as the meat cooks. Skimming them keeps the sauce clean and less greasy, which matters because the stew is simmered for a long time and the liquid is not reduced by boiling.

Swap the onion

How well each one fits the dish's main ingredients (mutton, pepper, potato):

  1. Carrotfits better
  2. Capsicumfits better
  3. Tomatofits about as well
  4. Onionthe original

Fit is the average pairing score against mutton, pepper, potato. Candidates are from the same food group and used in at least 100 recipes.
